Tomato-Basil Dressing

  • 2 roma tomatoes
  • 1 red bell pepper
  • 1/3 c. red wine vinegar
  • 1/3 c. sundried tomatoes
  • 6-8 basil leaves
  • juice of 1 lemon
  • salt, to taste
  • 1/2 c. water
Blend the ingredients until smooth, adding more water if you want it less thick. Refrigerate any excess. Courtesy of the Kitchen of Health.
